yes a z-score would be someone's score minus the mean, divided by standard deviation.

Sorry, but I can't understand. The Math action allow us to perform mathematics operations using app's variables, for example. So, if you have in one variable an "score" value, and you want to perform some math operation with that variable, in principle you can use the Math action to do it. What I am missing? What a "lookup table" means for you?
So i have done this in Excel, where all scores of a test for a person of a certain age have a mean and standard deviation. A z-score would be someone's score minus their age group's mean divided by the standard deviation of that age group. I'm trying to think about how to better describe it...

Sorry, but even the power of the Math action doesn't have something like a "Excel Z-Test function". However, if you can found an implementation of that function in Javascript, then you can try to use it from your App Builder app.
